350g unsalted butter
175g golden caster sugar
275g plain flour
200g ground almonds
100g dried cherries
pinch of salt


  1. Cream together the butter and sugar
  2. Sift the flour and salt
  3. Beat the flour, salt and almonds into the butter mixture untill you have the consistency of bread crumbs
  4. Fold the cherries into the mixture and bring together into a ball of dough
  5. Smooth the dough into a greased baking tray (roughly 30 x 23 x 4cm)
  6. Cover with cling-film and chill for an hour
  7. Preheat the oven to 160C
  8. Remove the cling-film and prick all over the surface of the shortbread using a fork
  9. Bake in the oven for about 45 minutes unill golden
  10. Cut into fingers/ squares, as desired, and serve
