a nice accompaniment to wraps and things in the summer


1/2 Iceburg lettuce
1/4 cuccumber
2 tomatoes
150 feta cheese
black olives
juice of 1 lemon
1 tsp dried mint
drizzle of good olive oil


  1. Shred lettuce into thin strips
  1. dice tomatoes and cuccumber into small pieces
  1. cut cheese in to relatively small cubes
  1. Cut the olives in half
  1. Sprinkle the lemon juice and mint over the salad, drizzle over a small amount of the olive oil
