Ingredients

500g potatoes
1 onion
2 tbsp chopped parsley
2 eggs
2 tbsp olive oil
salt/ pepper to season

Method

  1. Wash and then grate the potatoes
  1. Chop the onion
  1. Beat eggs
  1. Mix all of the ingredients in a bowl, and season
  1. Heat the oil in a frying pan to a high heat
  1. Shape the mixture into small 'rounds'
  1. Fry lightly untill golden, flip over and fry lightly untill golden on other side too.
