Why not try making your own jam to go with these scones?


500g plain flour
75g icing sugar
25g baking powder
1/2 tsp salt
125g unsalted butter
2 medium eggs


  1. Preheat oven to 200C
  2. Sift together all of the dry ingredients
  3. Rub the butter into these ingredients
  4. Beat the eggs into the mixture
  5. Gradually add milk untill the mixture can be brought together to form a ball of dough
  6. Flour a flat surface and roll the dough out to a 2cm thickness
  7. Cut out the scones using a round cutter
  8. brush the tops of the scones with milk
  9. Bake in the oven for about 18 minutes untill risen and golden

You can vary your scones by adding ingredients to the mixture such as dried fruit, cherries, or even cheese.
