An easy-to-prepare chicken stir-fry.  Leave the chicken out for a healthy vegetarian option.

Preparation time: 15 mins, Cooking time: 15 mins


1 medium chicken breast
4-5 medium mushrooms
1/2 large onion
1/2 orange pepper, finely sliced
Handful of beansprouts
1 tbsp vegetable oil
200ml Satay sauce


  1. Slice the mushrooms and onion
  2. Cut the chicken into thin pieces
  3. Heat a pan of water for the noodles
  4. Fry the chicken in the oil for 5 mins or until lightly browned
  5. Add the onion, pepper and mushrooms and fry for a further 5 mins
  6. Meanwhile add the noodles to the water (which should by now be boiling)
  7. Add the satay sauce to the chicken etc, and leave to simmer
  8. When cooked add the noodles to the stirfry
