One of my favourite desserts.  You can vary the fruits used to suit your taste.


250g blackberries
250g raspberries
250g strawberries
8 pieces of bread
3 tbsp clear honey
whipped cream to serve


  1. Empty the balckberries and honey into a sauce pan and heat gently for 15 minutes
  1. Add the strawberries and raspberries and heat for a further five minutes, allow to cool
  1. Line a pudding basin (an approximately 1000ml one) with the bread, remove the crusts from the bread first, reserving one piece for the top
  1. Empty the fruit into the bread-lined basin, add the final piece of bread to the top
  1. Place a saucer or some other suitable flat objet over the top of the basin and place a weight on top of it (approximately 500g) to compress the pudding
  1. Chill over night
  1. Serve with whipped cream or some other accompaniment of your choice
